Libation: Apple Cake (Germany)

While Oktoberfest is officially over in Germany, in my house I’m still celebrating.... in my own way with baked goods instead of beer.  Last weekend I picked some delicious Macintosh apples from a farm near Cleveland and I thought I would make an apple pie.  But laziness got the best of me and I got to thinking about some amazing Versunkener Apfelkuchen (AKA German Apple Cake) I had on a trip to Munich two years ago.  

Apple cake in Germany is like apple pie in the US.  And when I think about apple pie I always think about my mom - especially stealing cinnamon-coated apple slices as she made homemade apple pies.  Today is also my mom’s birthday.  So happy birthday mom.  I wish you were here to enjoy this apple cake with me! 

German Apple Cake

2 eggs

3/4 cup vegetable oil

2 cups sugar

1 teaspoon vanilla

2 cups flour

2 teaspoons cinnamon

1 teaspoon baking soda

1/2 teaspoon salt

4 cups peeled chopped apples

 

In large bowl, beat eggs and oil until smooth.  Add next 6 ingredients and mix well.  Fold in apples.  Pour into greased 9 by 13 pan.

Bake at 350F degrees for 50-55 minutes
